The word is another Menckenism. The root word means molting. So you can see how they are analogous.

@SunsetSnuggles I think "masseuse" is still acceptable if you're speaking French (so probably OK in the part of Canada that those signs came from). In the US, however, it tends to often be used to refer to people doing non-platonic massage. (I'm not a massage therapist, but I know a lot of them.)
