I don't think I've seen a thread yet on one of my favorite topics, food. What's for dinner everyone? Anyone want to share any recipes or just talk about their favorite foods?

  • I'm gonna start off by roasting some corn. Then I'm gonna follow up with some grilled chicken, bell peppers and tomatoes and make some tacos. I have some beans on the stove. I'm gonna end by grilling up some peaches and pineapple. If you've never grilled pineapple, you're missing out, it's amazing. I also have some home made sangria to sip on.

  • OH food is one of my favorite topics. Tonight will be pork tenderloin with a garlic and creamed spinach topping and roasted veggie sides. I do Keto (low carb) most of the time so I might make some sugar free peanut butter cups for this week's treat. They are super simple but very rich and yummy.

  • WALNUT CHICKEN

    Sauce (mix prior to cooking, and I usually double the amounts listed below in parenthesis, because I like the sauce)

    3 Tbls soy sauce (6)
    2 teas corn starch (4)
    2 Tbls dry sherry (4)
    1 teas finely grated ginger root OR 1 tsp ginger powder (2)
    1 teas sugar (2)
    1/2 teas salt (1)
    ¼ teas cayenne pepper (1/2 teas)

    Ingredients needed:

    1.5 pounds of chicken breast, skinned, split, boned and cut into bite size pieces
    1.5 to 2 cups chopped walnuts
    1 bunch of scallions, cut/sliced
    1 green, 1 red pepper (or two green, or two red, etc) sliced into bite size pieces

    Stove at medium high to high for 2-3 minutes for each part.

    Use 1 tsp oil in skillet/wok and pour in walnuts. Walnuts will almost blacken. Remove from skillet/wok.

    Use 1 tsp oil in skillet/wok and pour in scallions and peppers. 2 minutes. Remove from skillet/wok.

    Use 1-2 tsp oil in skillet/wok and pour in HALF the chicken. Brown chicken, remove from skillet/wok. Pour in 2nd half of chicken and brown. Lower temp to medium. Stir/mix sauce. Add the chicken, walnuts, scallions, peppers and pour in the sauce. Allow sauce to thicken and remove from heat.

    Serve over bismati rice and side bowls of mandarin oranges.

    Oh man... This is definitely my thread. My favorite hobbies are cooking and baking from scratch. I have so much food porn it isn't funny hehe.

  • Currently I am preparing one of my favorite Jamaican meal! I am making some delicious and flavorful escovitch fish, accompanied by rice and peas. To add to this mouthwatering dish, I prepared a colorful garden salad.

  • Red and gold beet salad with watercress and crumbled goat cheese. Tossed with red wine vinegar, olive oil, honey, minced garlic, kosher salt, ground pepper. I might have sampled some Scotch on the rocks, too.

    I made delicious homemade seasoned turkey tacos and refried beans last night for dinner. So yummy and such a staple in my house.

    I love making what I suppose could be called,'Zatarain Chili,' even though it doesn't have a name. I've tried. Nothing sticks other than, 'that rice stuff you make.'

    Cook 2 boxes of original Zatarain dirty rice mix, (or generic) brown 1-2 pounds of ground beef or sausage (I prefer half of each, using hot sausage) and then dump in whatever beans you prefer. I use (2 cans each) black beans and chili beans as well as 1-2 (I prefer 2) cans of Hunt's(? - my memory is awful) tomatoes and chiles. Drain the cans of beans - only some unless you prefer a soupier consistency - until you're satisfied. Personally, I don't drain 2-3 cans.

    I used to use kidney beans but my father has awful teeth so I switched to softer ones. I also used to use strictly hot sausage and 1-2 cups of Texas Pete although that was QUICKLY changed because my family doesn't share my love of all things spicy. Oops.

    I also recently discovered an awesome 'brownie-in-a-cup' recipe (and I have tried many because I am a lazy, sweet-toothed creature) that I can share if you'd like. Ooey, gooey brownie goodness.

  • I'm still debating what to make for dinner tonight. It's still a bit warm but I'm hankering for soup so I might make my easy meatball soup. It's just broth concentrate + water, frozen Trader Joe's turkey meatballs, fresh spinach, carrot, onion, & zucchini slowly simmered with minced garlic a dash of heavy cream (or butter) with spices, salt and pepper added to taste. I usually just make enough for one large bowl and it only takes like 20 minutes with easy clean up.

    Long day at work so I picked up cucumber/avocado rolls(extra ginger) and veggie tempura.

    Add a little 7Up I shouldn't be drinking and ahhhhhhh sweet Thursday.

    How about some breakfast ? Like scrambled eggs with cheddar cheese, fried potatoes with fresh herbs , sugar cured ham , and toast .
    Most important is the HOT sauce . If Yalls want real suthern ah might make grits instead of potatoes.

  • Ah breakfast, I'm making breakfast for my shop next Friday. Eggs, bacon, chorizo, homemade tortillas and salsa. It's for three of my employees 5 year anniversary. I've never done breakfast for them. Any time we cook, it's usually lunch later in the day so I thought it would be nice to switch it up.

    I made some homemade seasoning for some frisco cheeseburgers i made and my specialty grilled zucchini crack! Sooo yummy
