    Breakfast by the pool in Arizona

  • No photos, just a story.

    A friend of mine, someone who I’ve known since 1971, is undergoing treatment for cancer in his throat. He lives 2 hours away and so sometimes he stays with me when he has doctor appointments and I go with him to his appointments. First he had the surgery in his throat and could not swallow at all for 2 or 3 weeks, had a feeding tube down his nose. Then he had to have all his teeth pulled out a week ago because the radiation treatment will probably mess up his jaw bone and cause complications with his already not in very good shape teeth. He can swallow now but can only eat liquid, puréed, and very soft food. I made some really tasty soup for him and made him grits and an omelet for breakfast. He likes my cooking and he’s not a fussy eater. He was grateful to have something good, tasty, and nutritious that he could actually eat.

    The next few months won’t be any easier. The radiation will probably make his skin and throat sore. He will probably lose his sense of taste for awhile. He will probably lose his appetite. He will have chemotherapy, too, though not real strong chemotherapy. His hair shouldn’t fall out but it may make him nauseous.

    Making good, tasty, nutritious food for people is one way we show love. I am grateful for the opportunity to pay back a friend who has helped me many times over the years. Food is medicine.

    I made this recently - French Toast with coconut crumbles, homemade raspberry-
    blueberry compote, and fresh berries. It was GOOD.

  • This is a thread I can absolutely relate to. Growing up I always had a very unhealthy relationship with food and this lasted well into adulthood for me. It wasn’t until after I’d bought my house that I’d begun really cooking and found such love, joy, and peace in it.

    The kitchen has become my happiest place and the place in which I can pour out all of my feelings, good or bad, and make something amazing. Cooking is such an act of love for me and every time I make a tasty meal it takes me to some of the happiest memories of my childhood.

    In the first class we made nanny berry jam, hackberry tea, bannock, duck and mushroom soup and had freshly brewed chaga with maple syrup. It was AMAZING
