I am a proud member of the 2SLGBTQIA+++ community 🏳️🌈🏳️⚧️ but I have struggled to comprehend our own ideology, specifically gender. 2 questions: How many genders are there? Can anyone just pick and choose what gender they are?

As a cis man, I am certainly no expert. I feel like there are at least two haha: man and woman. And of course all the unique experiences and identities that fall between the binary. If your first question does not have an answer, I’m okay with that.
Yes I believe people have autonomy over their own gender.
Gender is not an ideology of the LGBTQIA+ community. It is a social construct the same way names are - it was created as a way to categorize people based off of arbitrary traits at some point that eventually became "tradition". Some people feel their gender is a deeply rooted part of their identity as a person, others don't, just like some people are really attached to their birth names and others are not. Gender expression is an outward expression of an internal experience through the lens of a person's cultural understanding of what gender is and what the various genders "should" look like.
As to how many genders there are: technically as many as there are people. The reason new terms keep popping up is because people create new terminology to better express internal experiences and then other people recognize themselves in these new terms and start using them, creating a new subcommunity or "label". From a sociological standpoint it's not all that different from when any other community is born around shared interests or beliefs, give themselves a name, and start to include that name as part of their identity matrix.

Gender is a linguistic term that categorizes human biological sex (male, female) with age (youth, adult), so there are only 4. Youth male is a boy, youth female is a girl, adult male is a man, adult female is a woman.
There is no such thing as 'gender expression'. Your gender is are what you are biologically and chronologically. The only change in gender is when your age changes from youth to adult: a boy becomes a man and a girl becomes a woman.
If you disagree, please define what a woman is in 1 sentence.
