My go-to cocktail, but make it pasta! This Extra Dirty Martini Pasta is a homage to the OG cocktail made with GIN (okay, or vodka π), green olives, olive brine, garlic, lemon zest, cream, Parmesan, and spaghetti. Quickly comes together in one skillet and is great for a fun weeknight or weekend dinner. Grab the recipe below!
Ingredients: 1 lb spaghetti 2 tbsp unsalted butter 1 cup pitted Castelvetrano or green olives, roughly chopped 1/4 cup olive brine 4 cloves garlic, minced Zest of one lemon 1/3 cup gin or vodka (*I like Bombay Safire) 2/3 cup heavy cream 2/3 cup finely grated Parmesan, plus more for garnish 2 tbsp chopped fresh parsley Fresh black pepper
Directions: Bring a large pot of water to boil. Add the spaghetti and cook according to package directions. Strain the pasta and reserve one cup of pasta water. Next, preheat a skillet to medium-high heat and add the butter, olives, lemon zest, and garlic. Cook for a few minutes until fragrant. Next, add the gin and cook for a couple of minutes until reduced by half. Stir in the cream, olive brine, pasta, 1/2 cup of reserved pasta water (adding more if desired), toss to combine until the pasta coated with sauce. Top with Parmesan and parsley!!
LEMON TRUFFLES

In a heatproof bowl, combine the white chocolate chips and butter.
In a small saucepan, heat the heavy cream over medium heat until it just begins to simmer. Pour the hot cream over the chocolate and butter mixture. Let it sit for a minute to melt the chocolate, and then stir until smooth.
Add the lemon zest and lemon juice to the chocolate mixture, stirring well.
Gradually add the powdered sugar, stirring continuously, until the mixture is smooth and well combined. If you want a more vibrant yellow color, you can add a few drops of yellow food coloring.
Refrigerate the mixture for about 2 hours or until itβs firm enough to handle.
Once the mixture is firm, use your hands to roll small portions into truffle-sized balls. If the mixture is too sticky, you can dust your hands with powdered sugar.
Optional: Roll the truffles in additional lemon zest or yellow sprinkles for a decorative touch.
Refrigerate the truffles for at least 30 minutes before serving.
