Christmas gifts for our family Christmas tomorrow. Hot chocolate mix, vanilla sugar cubes, cinnamon extract, Christmas jam, and pine cleaner ( plus a spray bottle for the cleaner)
*Edit to add recipes Pine Cleaner Pack jars with pine needles/branches, Add sliced lemons or orange (optional) Fill jar with distilled vinegar. Allow to seep for 30-45 days. Strain and put in a spray bottle. Some recipes say to dilute 2/3 pine and 1/3 water other say to just use full strength. Use for overall cleaning-counters -windows etc.
Vanilla Sugar 1-cup sugar 2-TBS vanilla extract Stir until extract is mix thoroughly. Should look like damp sand. Pressed the sugar in to the molds using a angled spatula. Put the filled molds in the oven with the light on over night-no heat just the oven light . I ordered the silicone molds from Amazon. Thereβs approximately 1/2 teaspoon in each cube. I also have some going using vanilla beans/caviar but wasnβt sure how well my family members would like having specks in the sugar so I used extract for thereβs
Christmas Jam
Prepare the jars and lids: sterilizing your jars and lids
Prepare the fruit: In a large saucepan, combine the cranberries, strawberries, orange zest, and orange juice. Place the saucepan over medium heat and bring the mixture to a simmer. Cook for about 15 minutes, or until the fruit has softened and released its juices.
Add the sugar and spices: Stir in the granulated sugar, cinnamon, nutmeg, and cloves. Continue to cook the mixture, stirring frequently, until the sugar has completely dissolved.
Incorporate the pectin: Sprinkle the powdered fruit pectin evenly over the fruit mixture while stirring continuously. This will help the jam achieve its desired gel-like consistency. Continue to cook the jam for an additional 10 minutes, stirring occasionally to prevent sticking.
Test for gel stage: To check if the jam has reached the desired gel stage, place a small amount on a chilled plate and allow it to cool for a few minutes. If the jam thickens and holds its shape when pushed with a spoon, it has reached the gel stage. If not, continue cooking for a few more minutes and repeat the test.
Fill the jars: Carefully ladle the hot Christmas jam into the prepared jars, leaving about 1/4 inch of headspace at the top. Wipe the rims of the jars to remove any spills or residue, then place the lids on top and seal them tightly.
Process the jars: Submerge the filled jars in a boiling water bath, making sure they are fully covered with water. Process for about 10 minutes to create a proper seal and ensure the jam is safely preserved.
Cool and store: Once the processing time is complete, carefully remove the jars from the water bath and place them on a towel-lined surface. Allow the jars to cool undisturbed for several hours. Check seal- store
I love baking some cajon sweet potatoes. (Cinnamon, Brown Sugar, Paprika and Seasoning salt.) you could use brown monk fruit sweetener as an alternative but I suggest keeping the seasoning salt. I made these for one of my elderly hospice patients who fell and she said they made her forget she had fallen. I recently ate these when I was having a bad day and I instantly started laughing at how Good they made me feel. Lol! I hope some of you guys try this recipe.

Reflecting over some coffee and a rainy day to muse about life, enrichment, what leads us all to our destinations to just pack up and move forward again into the psyche of our minds. The altruistic facts laid out in front of me as I plan to make a chicken and dumpling recipe tonight, I feel a sense of joy and peace in my cooking that I used to not have.

Tonight we made "a little Christmas fettuccine" in honor of The Holiday:

I made 2 Prime Ribs, one medium rare and the other medium. The picture of it cut is after Iβd warmed it up in the over for leftovers so itβs more cooked than originally. Tasted amazing and melted in the mouth.
Serving: 6lbs (1lb per person)
Need: Bowl (for mixing seasoning and butter) Cast iron skillet or 9x13 dish Some sort of rack to place PR on
Ingredients: Prime Rib Fresh- Rosemary, Oregano, Thyme Minced Garlic Salt Pepper Prime Rib seasoning (of your choice) Softened butter
Cook: 500* for 15min to start Then 325* for 15-20min per pound
Steps: 1. Night before cooking uncover the meat and season all sides with coarse salt. Leave uncovered in fridge. 2. Take meat out and blot dry, then sprinkle with salt and pepper and let rest at room temp for one hour 3. Soften butter and mix in fresh seasoning, rub onto all sides of prime rib 4. Let sit for an hour 5. Preheat oven to 500 6. If bone-out prime rib then place on a rack in safe baking pan. If bone-in then place bone side down directly onto backing dish. Cook for 15 minutes at 500* 7. Not opening door lower heat to 325 and cook for 15-20 per pound 8. Once done take out and let rest for 30 minutes to an hour before carving.
