I suspect you know all this already, but just in case ....
If you imagine the Earth in a three dimensional Euclidean space then the line will indeed appear curved from some perspectives .... although it will appear straight from others.
If you project the surface of the Earth onto a plane using the Mercator projection, the one most commonly used for maps of the world, then the line will appear curved. I suspect there are an infinite number of other projections which would make the line straight within the projected plane. Although I also suspect some of the resulting maps would look pretty weird.
But in the appropriate non-Euclidean geometry for the Earth's curved surface, it is straight. If the sea was perfectly calm, and the boat perfectly symmetrical, etc., then once you set off in the right direction you would not need to use the rudder.
