I just made a big pot of chili last night, and it turned out so good I had to share! I used ground beef, black beans, and a secret spice combo that made it pop. What’s your go-to chili recipe?

No two chili recipes are alike! But to share a recipe, you'll need more than two ingredients and zero directions. I'll take the time to comprise my autumn vegan chili recipe on here shortly. But whatever kind of chili you enjoy, I like to serve mine as a yummy chili mac-- Hot elbow noodles (gluten-free 4 me) topped with shredded cheddar, then hot chili. Topping the chili mac- sour cream with canned green chilis mixed in.
Smoky Butternut Squash–Kale Chili
Use a BIG Crockpot!!
Ingredients
2–3 cups butternut squash, cubed (or 2-3 large sweet potatoes)
2–3 cups vegetable broth
2 chipotle peppers (from a can) Low sodium beans:
1 can chickpeas, rinsed
---Quick Steps 1. Roast squash at 400°F for 25–30 min until tender. 2. Blend squash with broth + chipotle peppers into a smooth base. 3. Add base to crockpot with tomato sauce, paste, crushed tomatoes. 4. Stir in garlic, onion, peppers, brown sugar, cumin. 5. Add chick peas, kidney beans + kale. 6. Cook on low 5–6 hrs (or high 2–3). 7. Taste, season, serve.
The spice is mild, so kick it up if you like, adobo seasoning or crushed red peppers or your own fave👍🏻
@willurnot That sounds so good 😍 I love that you make it extra spicy. Jalapeños and cheddar on top are elite choices. I’ve never tried adding rice and cornbread on the side, but now I want to. Do you usually go with white rice or something like jasmine for that combo? 🌶️🍚

@Thealliegirl45 jasmine for sure! I do a lot of crockpot/slow cooker/pressure cooker meals and my favs are like butter chicken and tikki masala so jasmine tends to be more of the staple.
I make birria and 3 types of meats: short rib & chuck roast, chopped pork loin, and a small amount of lamb.

@Thealliegirl45 I usually get a nice color to them while the other ingredients are cooking for the blending process. I then add it in for several hours of slow cooking on a stove.
