I meant to bake the soda bread Monday, but I put it off and now will have soooo much cooking & baking to do today 😅 Even though it's only me and the housemates this year, it's a tradition I try to keep alive as good food, fresh homemade bread, family & friends are always a good thing. Going to be making corned beef, cabbage, and potatoes (Irish-American), then later this week I'll be making a batch of more traditional colcannon to use up the last of potatoes. Sadly, my beloved Irish cider is out of stock locally, so had to acquiesce and go for a NorCal dry cider. (I'm a bad Cork gal and can't stand Murphy's 😅 or Guinness for that matter)
