  • So my job decided to give us employee appreciation days by bringing a bbq truck … (I think we should have gotten a raise instead but all good πŸ€·πŸ»β€β™‚οΈ) didn’t know if I should go for brisket sandwich or pull pork sandwich, so got both … and didn’t know whether to choose from Mac salad or cole slaw so got both … let’s see how this goes.

  • So NY officially sucks at making down south bbq πŸ–β€¦ both the brisket and pulled pork was flavorless , I did however prefer the pull pork sandwich …. The coleslaw was better than the Mac salad, but I did see and taste the attempt at an incredible Mac salad but it didn’t happen …. Verdict : If you’ve ever had real authentic down south bbq, do not get it in Nyc.

    Here’s my favorite pizza I make:

    -The β€œsauce” is just heavy cream with either parm or pecorino sprinkle on top of it
    -Mozzarella
    -Gouda
    -Prosciutto
    -Campari tomatoes quartered and seasoned with sea salt, fresh cracked black pepper, and red pepper flakes!
    -Then the crust is brushed with garlic infused olive oil

    I’ve owned several pizza ovens over the years. I’m down to two right now:

    -An outdoor mobile pizza oven that can do a 16” pizza that uses wood, propane, or the combination of both.
    -A commercial indoor tabletop pizza oven that gets up to 832Β°F

    They also sell on Amazon, as well.

    They offer 2 sizes: 12”, 16”. I’ve owned both. While the 12” is significantly harder to maneuver pizzas around due to its size, it’s much easier to work with in terms of heat management. The 16” is convenient bc of its size but the placement of the heating element (behind AND under the stone) presents a problem of easily burning the bottoms of the pizza. I mitigated this by installing a huge pizza stone made of volcanic clay imported from Italy.
