I made the crispiest crunchiest chicken tenders with some homemade honey mustard and it was exquisite!
It's a wet batter that has equal parts: -Rice flour -Corn starch -Water
Mix until thoroughly combined, then slowly add more water until you get a semi-thin pancake batter consistency. Fry at 325 until cooked throughout -- color will look anemic and not done. Let chicken rest. Up the heat to 375, fry again to add color.
This chicken can be sauced, covered in plastic wrap, whatever... and it will STAY crispy and crunchy!
