Food sensitivities

Anyone else have food sensitivities? I can’t have gluten or dairy and have the hardest time finding alternatives. Does anyone have any resources for recipes? I’ve heard of a pecan spread that is like a cheese substitute. I’m willing to try anything new. Thanks a million. 🤗

  • I recently switched to having a mostly plant-based diet and I realized a lot of my acid reflux and general bloating was because of meat, primarily processed meats. It is not so much a sensitivity but holy guacamole has it been good for my health. I have found when cooking vegan food, the recipes that try to "substitute" for or imitate things tend to end up lackluster.

    Instead, I tried to find recipes that made the ingredients shine. Mapo tofu without pork for instance. I also make a fun tofu rice bowl with shiitake mushrooms and cucumber. A vegan breakfast taco of my own creation is caramelized onions, tofu, garlic, all sauteed in rich olive oil. Put some diced fresh jalapenos for some spice if you like ^____^

  • Heya! I know nothing about gluten, but I'm vegan (not due to allergies; ethical reasons), and many vegan recipes and store-bought items are also gluten-free. If you search "vegan gluten free cookbook" on Amazon, tons of results come up. This particular one is on my wish list, this year:

    I am sometimes sensitive to dairy, and other times not sensitive to dairy.

    I’ve been trying to cut oxalates out of my diet for joint health

    Vegan cheeses used to be terrible, but I had a vegan pizza recently that honestly wasn’t too bad!

  • @lesmis33 wow, those sounds great. Yes, trying to go with mostly Whole Foods, but every once in a while it’s nice to have a treat.

    @Hollydollhugs Food For Life breads (a brand) are gluten free, nut crackers like almond crackers are gluten free, and there are a million other things. If you type in gluten free cookbooks on Amazon there are literally hundreds! In addition, you do not have to adopt a vegan diet to eat gluten free. You just have to rid yourself of grains and flours that are made from wheat, barley and rye that carry the gluten protein. Seitan, which is used in vegan cooking, is made from gluten, so be careful.

    As for dairy, there are dairy free alternatives in most grocery stores today.

    Feel free to DM on this. I owned a few health food stores in the 90s before selling them off and before that I worked for a National health food distributor and I sold to Whole Foods, Vitamin Cottage, and the now defunct Wild Oats. So I know a bit about this.

  • @sunnysideup Totes. Daiya is still ick, but Follow Your Heart and Violife are my favorite vegan cheeses.

    @BoomerSpooner I miss Wild Oats. They used to have amazing popcorn samples on the weekend, and a magician or balloon animal artist, when I was little.

  • @sunnysideup I love the vegan cheese at Mellow Mushroom on pizzas, and it is Follow your heart, like @SunsetSnuggles suggested. I hadn’t bought it by itself yet, but I will look for it. And, I agree, Daiya is ick, but I will try Violife, @SunsetSnuggles. Glad you made that suggestion. That’s much easier than trying a million! :)

    @Hollydollhugs On dairy, I mostly just cut it out of my diet, although I do chance it on ranch dressing. I’ve tried dairy free ranch, and it’s just not the same. I just eat small amounts of the real stuff.

    I don’t have to eat gluten free, but I have bought almond flour at ALDI before, and I like their cup bread recipe on the bag )it’s a green bag), I put a little jelly on it, and I think there was a chocolate chip cookie recipe that was good (on the bag also), but sounds like you would need dairy free chocolate chips.

    @Hollydollhugs By no means would I try to get you to go vegan, FYI, it's just automatically dairy-free, and often gluten-free, so all those recipe books would be very simple to swap real meat into.

  • I’m allergic to most raw fruit. My body mistakes it for tree pollen and I’m allergic to tree nuts. I’m also lactose intolerant and have GERD so stomach acid issues. Haha I feel your pain

  • I had a Christmas party for work and had both wheat and dairy, knowing what would happen. It makes me feel sick for sure. I’m not anaphylactic or anything, just need to stay away from it.

  • I am gluten intolerant and I bake with either: Pamela's GF Pancake mix or Bob's Red Mill One for One GF flour substitute. Either one (or a mix of both) can make a really great banana bread. I've also used both for biscuit and gravy. 🤤 I also enjoy Udi's GF breads. I prefer Udi's hamburger buns and their Millet Chia or Flax bread loafs. Happy Baking!!!

  • Before I had my knees replaced, gluten, would really mess up the arthritis in my knees. I’ve had good gluten-free pasta. Louis bread makes keto bread and cake but I have found it horrible. You really have to try out different things. My brother would send me this meme once in a while and invite me over for dinner.

  • Not very high tolerance to spicy food.

  • I clear up skin issues with occasional fasting. I consider that more of a skin sensitivity. My food sensitivities are all positive like being able to taste GMO's, pesticide and mold. And foods affect my state of mind. I have no flavor or texture considerations. My skin is a whole other story.
