Both are options in the availability section of profiles. Some check "evening", some check "evening" and "night". Are there specific cutoff times, or is it open to interpretation?
I would see evening as like 6-10, and anything past that as night.
To the best of my knowledge it is open to interpretation. I think the general norm is evening becomes night when the sun goes down and it gets dark. This varies by season with “night” starting earlier during the winter than the summer (In the Northern hemisphere).
To @WriterGF point, in the Northern Hemisphere “night” would start around 6:00 pm in the winter and around 10:00 pm in the summer (with daylight savings).

Subjectively, I would consider "night" as "anything past bedtime" 😁
Evening is everything 5pm and past, prior to that is afternoon
Night can start at 8-9pm
When it comes to schedule meets I sometimes say Evening instead of Night as it may sound less intimidating to some who may overthink it. If you think it silly then it might be but still kinda makes sense sometimes.

Leaving lepidoptra – please, don’t touch the display, little boy, aha, cute! Moving to the next aisle we have Arachnida, the spiders, our.. finest collection. This friendly little devil is the heptothilidi, unfortunately harmless. Next to him, the nasty licosa raptoria, his tiny fangs cause creeping ulcerations of the skin laugh.
And here, my prize, the Black Widow. Isn’t she lovely?.. and so deadly. Her kiss is fifteen times as poisonous as that of the rattlesnake. You see, her venom is highly neurotoxic, which is to say that it attacks the central nervous system causing intense pain, profuse sweating, difficulty in breathing, loss of consciousness, violent convulsions and, finally.. death.
You know, I think what I love the most about her is her inborn need to dominate, possess. In fact, immediately after the consummation of her marriage to the smaller and weaker male of the species, she kills and eats him – laugh oh, she is delicious.. and I hope he was!

To me, Evening is typically happy hour, 4:00-7:59. Night is 8 pm until sunrise. Of course, the beginning of Night can slide to the right if the sun goes down later during Daylight Saving Time.
Evening is from 5:15 until it’s weird to eat dinner, at which point it’s night
