The lyrics to Stille Nacht, heilige Nacht (Silent Night, Holy Night) were written in 1816 by a priest, Joseph Mohr. Two years later, the melody was hastily composed for guitar by organist Franz Xaver Gruber after the organ had suddenly broke down---attributed, in legend, to a mouse---with the new musical piece debuting on Christmas Eve, 1818, at the St. Nicholas Church in Oberndorf, Austria.

The "X" in Xmas is the Greek letter χ (pronounced "ki", as in kite).
χ is the first letter of the word Christ in the Greek χριστός (chrīstós).
Not everyone could write back then, so "Xmas" became an acceptable shorthand.
