Ooooo I made something special for me the other day. If you remember those blue boxes of golden goodness from your childhood, you can appreciate what it feels like to replicate the deluxe versions of boxed mac and cheese. This one is a little bit lighter than your typical recipe using light unsalted butter and light sour cream to get that Velveeta-like texture. Adjust the recipe according to your tastes - I never measure stuff out, but I did approximate.
Mac n Cheese is one of my kryptonites...
Right up there with ice cream, a really solid groove, and having my hands massaged.

Tonight I once again indulged the child in me and made some kid food…nuggets. Not just any nuggets though. Hecking cauliflower nuggets. It’s dairy free and vegan depending on what breadcrumbs are used, except for the spicy pink sauce ‘cause that has mayonnaise in it. But there isn’t really a recipe for this one. Ya just gotta eyeball it and make it a couple times to know.
Wash and trim the cauli into nugget-size pieces. The batter can be made by whisking finely sifted flour with water, stirring until no lumps remain and a thick-ish paste is formed that just runs off the spoon. Add sprinkles of salt, pepper, and garlic salt to taste. Be light with this if you intend to use dips or sauces, or use more if you like them plain. Coat the bites in the batter tapping off excess, then drop into a bowl of seasoned breadcrumbs and cover then gently press to coat. I used Martelli’s Italian Style (not vegan). Spread bites onto parchment sheeted pan and bake at 400 for 45-50 minutes until desired crispiness, turning about halfway through.
