yeah the apple pie with cheese thing.... I never saw it till I worked in a restaurant while in college, that had apple pie on the dessert menu. Occasionally peeps would ask for a slice of cheese on top of the apple pie. Some people luv it that way!
I like rose colored glasses and that’s how I’d rather see the world. Even though that’s not your reason @Unscented_Lemon , it would be mine. There’s definitely too much ugliness that I’d rather not see

°please note: I specified when "pairing with fruit pie" above. This is an important distinction because, IMO, in nearly any other culinary circumstance considered, cheese is not a reasonable substitution or replacement for ice cream.
Nor is ice cream a good substitute for cheese.

I'd try it too. I can easily imagine it working, and I'd say by now he's got the proportions all worked out.
And you never know what odd combinations would be tasty. I like fries with mayo, mustard, or malt vinegar a lot more than I like fries with ketchup. But then, I don't like ketchup. When I had a strange urge to cook a steak with cinnamon and vinegar, I was sure it would taste awful. It was quite tasty.

I had a friend staying over and she brought some type of cheese id never had. Its like a hard sweet cheese, kinda flakes but isn't soft. Tastes kinda like a pineapple nut with something else. She left it here and I've been having it with sliced cheese and apple as well as sliced on top of some toasted whole wheat bread with butter. Doesn't seem like it would be good but it's damn tasty 😋
